Sodium Citrate is the sodium salt of citric acid. Like citric acid, it has a sour taste. Like other salts, it also has a salty taste.
Trisodium citrate dihydrate is a tribasic salt of citric acid. It is produced by complete neutralization of citric acid with high purity sodium hydroxide or carbonate and subsequent crystallization.
