Sodium benzoate is widely used as a preservative in food processing and preservation. Benzoic acid can play a role in free state in food, so it is better in strongly acidic food. Benzoic acid is usually used in carbonated beverages, soy sauce, sauces, preserved fruits and fruit and vegetable drinks. Benzoic acid can be used with p-hydroxybenzoate in soy sauce and beverages to enhance the effect. Benzoic acid and sodium benzoate are commonly used to preserve acidic foods such as highly acidic fruits, jams, and beverage syrups. They can be used together with low-temperature sterilization to play a synergistic role |
