Sodium benzoate is widely used as a preservative in food processing and preservation. Benzoic acid can play a role in free state in food, so it is better in strongly acidic food. Sodium benzoate is the sodium salt of benzoic acid. It appears as a white crystalline chemical with the formula C6H5COONa. Sodium benzoate is commonly produced by the neutralization of sodium hydroxide (NaOH) with benzoic acid (C6H5COOH), which is itself produced commercially by partial oxidation of toluene with oxygen.
