Sodium bicarbonate is made industrially from a reaction of sodium carbonate with carbon dioxide and water. This chemical compound has wide-ranging applications across many industries. Primarily in cooking, it is used as a chemical leavening agent — when it reacts with acid, carbon dioxide is released that causes expansion of doughs and batters in products like cakes, muffins, cookies and some fried foods. As well as being found in many baking powder product preparations, sodium bicarbonate is also being used in cooking to make vegetables softer. As an odor absorber, it’s also popular for cleaning used books and is commonly added to washing machines as a replacement for softener and to remove odors from clothes. Since the heating of sodium bicarbonate releases carbon dioxide, it can also be used to extinguish small grease and electrical fires. In agriculture, it can be used to slow fungal growth and is adopted into some animal feed supplements. Sodium bicarbonate can be used as part of a mix to remove paint and corrosion when combined with other agents — a process called soda blasting. In a health setting, because it reacts with stomach acid to produce carbon dioxide, water and salt, this compound is also mixed with water to treat acid indigestion and heartburn. Sodium bicarbonate can also be used in mouthwash and deodorants, and even in the production of certain fireworks, where the release of gas causes a trail of ash to be produced
